Company Profile

For nearly 30 years now, Mrs Koulla Ioannou is practising the art of making traditional soujoukkos, inheriting the know-how from her mother-in-law. After many years of home making soujoukkos, Mrs Ioannou decided in 2003  to  established a company in order to commercialise her production. The company operates from a rural workshop in a picturesque setting at Kalopanayiotis village. The village is associated historically with the production of soujoukkos from the Marathasa area – a name that claims the origins and best quality of soujoukkos in Cyprus.

 

The small processing unit has recently been upgraded to meet all the hygienic requirements set by local authorities and procedures are now ahead for setting up the infrastructures to accept, guide and introduce tourists and local travellers to the traditional methods of processing grape must. At the centre of the Processing Unit lies a large cauldron for boiling the grape must and an extended area for hanging the soujoukkos threads in order  to dry. The process of dipping and drying the must is repeated up to 15 times with proportional number of layers sticking on each other to make up the final must roll. Besides soujoukkos, Mrs Ioannou produces the traditional grape must cake blocks, named in Cyprus as kiofterka.   

 

K.Ioannou Ltd specialises in the seasonal production of these two authentic foods which have traditionally been made by women at the villages on both sides of the Troodos Mountains that is Marathasa in the North and the Wine Villages in the South. Quality is further monitored since grapes from the family owned vineyards are used as raw materials, supplemented ocasionally by grapes procured from local growers.

 

 

Soujoukkos in International markets

A significant share of production is destined for the export markets including Greece, the U.K. and the USA, where the products enjoy an increasing acceptance because of the pure ingredients used and the authenticity of the product itself. The local market is served through an independent distributor who supplies major retail points and tourist shops around Cyprus.
