Marathasa valley has long been known as the place where traditional soujoukkos is made at its best. Women from the villages of Marathasa are proud for their art of making soujoukkos, an art that has historically been passed from mother to daughter. At the village of Oikos in Marathasa, just 1 km off the main Nicosia-Pedhoulas road, Mr Christakis and his wife Mrs Chryso have been making soujoukkos for more than two decades. Since the early 1990s they run a small rural workshop producing a range of traditional products with soujoukkos being their flagship item. In making soujoukkos, they maintain traditional processes and use grape juice that is extracted from the indigenous varieties of mavro and xynisteri. Grapes are procured from local vine growers and occasionally from as far as Arsos, in the Limassol wine villages District.
Alongside soujoukkos, a range of other foods such as roasted nuts and pastellaki make up their line of products. Pastellaki is an item where the company has recently expanded production and developed a broad range of alternative flavors from different nut blends including pistachio, almonds, cashew nuts, peanuts and mixed with honey or carob syrup. Caramelised peanuts and almonds sprinkled with sesame seeds are other unique products made exclusively by the company.
The company has recently expanded production and is now operating from a technologically advanced processing unit of 400 sq.m., in a hygienically approved environment. A separate facility which includes three cauldron units and an extensive area for hanging soujoukkos threads is available for producing and drying soujoukkos, the traditional way. Distribution is undertaken by the three company lorries which cover the entire Cypriot market.
Tradition passing down to new generation management
Thomas is the new generation family member to join the business and along with an extensive development plan, the business is looking ahead to expand in the export markets based on quality and the extensive know-how in making traditional products.
